Since posting this on my Instagram the other day, I've had so many comments and a lot of you were asking for the recipe... so here it is!
Avocado is one of my favourite foods and I try to eat at least one a day. This recipe came about as there's a small Italian restaurant that I regularly go to in in East London and they do an incredible baked avo. So, after having it so many times, I decided to work out what goes into it and have my own take on it... and this is the result!
As always, I'm not a professional chef, I just have a big love for food.

So, start with the sauce first:
Heat the olive oil in a large saucepan, add the onions and cook on a low heat until soft. Add the garlic and tomato purée. Cook for a few minutes then add the chopped tomatoes and oregano. Season generously with salt and pepper add a splash of red wine and simmer, put to one side.
The next bit is SO easy. Literally peel and 'de stone' the avocado and split into two halves. Then simply add 1 basil leaf and 2 -3 mozzarella pearls to the inside of each half.
Take an ovenproof dish and pour in the sauce, then put each avocado half into the dish on top of the sauce. Sprinkle with Parmesan, cover the dish with foil and cook in the oven on 180 degrees for around 25-30 mins.
Serve with some fresh basil or for extra taste and some chicken or salmon.
